Panagea theme is translation ready. You can rename those categories using language file.

You should translate panagea theme and should translate panage-booking plugin, too.

I checked your screenshot and you are in woocommerce menu.

Panagea theme uses woocommerce only for payment.

Categories you are saying now are hotels, tours and restaurants.

They are from panagea theme.
